  • One lime
  • 1 g of wasabi
  • One packet of Nori sheets (seaweed to make maki)

To start, you will be able to prepare the vinegar rice for sushi and maki. To do this, rinse your rice until the water runs clear (save the rice water for your hair!) and cook it in 330 ml of water. Meanwhile, mix in a bowl: rice vinegar, salt and sugar. Add this mixture to the cooked rice and stir gently, the aim not to crush the rice grains. Then let it cool until the rice is at room temperature.

Continue by cutting the log of goat cheese into sticks, then drain the pieces of dried tomatoes and cut them into sticks as well. In the tomato marinade oil, add the zest of a lime, then place the cheese sticks in it so that they take on flavour.

Once all the ingredients are ready, you can prepare your vegetarian maki. To do this:

  1. Place a sheet of Nori on a silicone mat (or cling film) and spread a thin layer of rice.
  2. On top, add a stick of cheese, a little marinade and a few sticks of dried tomatoes.
  3. Roll everything up, making sure that all the ingredients stick together.
  4. Cut the maki into several pieces and taste them with a hint of wasabi!

Vegetarian Sushi Rice Vinegar and Sesame Oil

Start by cutting your mushrooms, carrot, and zucchini with a mandolin and bake them for 10 minutes at 180°. While the vegetables are cooking, prepare the marinade by mixing the olive oil, sesame oil and sweet soy sauce. Once the vegetables are out of the oven, place them in the marinade and wait at least 1 hour for them to soak up the flavour.

Meanwhile, prepare the vinegar rice for sushi following the directions in the previous recipe. Once the rice is cold, you can start forming rice sausages in your palms. Then put them on a plate and cover them with your marinated vegetables and thin slices of avocado. Use your imagination to test different combinations of vegetarian sushi!
